How it is milled
We hold whole first-harvest leaf rather than powder. Your tea is milled after your order comes in, sealed straight into the tin the same day, and shipped within 24 hours — so it reaches you days old instead of months old.
How to prepare it
Sift about 2g — one heaped scoop — into a bowl. Add 60ml of water just off the boil, around 80°C rather than boiling. Whisk briskly in a W motion for twenty seconds until a fine foam forms.
For an iced latte, whisk the same way, then pour over ice and top with milk.
Storage and freshness
Keep the tin sealed, cold and out of the light. Unopened it holds well for months. Once it is open, use it within four to six weeks — that is when the colour and sweetness are at their best.
